  • Delicious Grilled Cheese

    The other day I had a hankering for grilled cheese, but I wanted to do something beyond the usual bread with cheese and mayo--I wanted something with a little more zing. So I went online and found a few recipes, then modified to use what I had on hand. Here's what I came up with:

    Grilled Cheese with Herbed Butter

    Ingredients:

    Two slices bread
    1 tablespoon margarine spread (I had Smart Balance)
    1 tablespoon Parmesan cheese
    Pinch of oregano
    Pinch of basil
    Dash of cayenne pepper
    2 oz sharp cheddar cheese, sliced
    More butter, margarine, or spray oil

    Heat a small skillet over medium heat. Put the margarine spread, Parmesan cheese, oregano, basil, and cayenne pepper in a small bowl and mush it up with a fork until it's well mixed. Spread the margarine mixture on the two slices of bread, then pile one side with sliced cheddar cheese and put the other slice on top, butter side down. Put a little butter, margarine, or spray oil in the pan and spread it around. Grill the sandwich until cheese is melted, a few minutes on each side. Enjoy!

    Isn't that easy? Just stuff I had in the fridge. And delicious! You should try it sometime. It's miles better than an ordinary grilled cheese sandwich.
